Dilly Delight Cucumber Salad

dairy free - gluten free - nut free - soy free


This is another adapted recipe, but this time from my grandmother. She always kept a garden with loads of cucumbers. This dilly delight cucumber salad is a jazzed up version of her salad and is so light and refreshing for all seasons. I love making it in the winter when I am longing for the fresh flavors of summertime.


Ingredients:

2 large English cucumbers, sliced thin (I use a mandolin to make them super thin and uniform.)

1/2-1/4 red onion thinly sliced (also mandolin)

Pack of fresh dill chopped (this is the part that makes it so fresh! Don't use dried, it's not the same.)

Mayo (about 1/8c) I used homemade so that it was soy free.

2tbs white vinegar

1tbs sugar to taste


Step by Step:

  1. Thinly slice all your cucumbers and 1/2 red onion.

  2. Finely chop the fresh dill. (It ends up being about 1/4c chopped for me, but you can use more or less depending on the size of the bundles your grocer sells.)

  3. Toss in a bowl and mix well.

  4. Prepare dressing by mixing the mayo, white vinegar, and sugar until it's a thick consistency. It should be thick, but thinner than a pancake batter.

  5. Toss the veggies in the dressing. The dressing will take some mixing to fully coat the veggies.

  6. Let sit in the fridge for 30 minutes or so, or enjoy immediately. It's delicious either way.
